Shoe Bottom Cookies - cooking recipe

Ingredients
    2 sticks butter (soft)
    1 c. white sugar
    2 c. flour
    1 egg yolk
    1 egg white
    1 c. crushed pecans
Preparation
    Cream butter and sugar.
    Add egg yolk.
    Cream well.
    Add flour and a pinch of salt until you have a stiff dough.
    Spread on a long cookie sheet.
    Beat egg white until foamy.
    Spread over dough.
    On top, sprinkle 1 cup crushed pecans and pat down with hands.
    Sprinkle just a little bit of sugar on top.
    Bake at 250\u00b0 until light brown.
    Cut into squares while hot.
