Mock Perogies - cooking recipe

Ingredients
    9 lasagna noodles
    6 to 8 medium to large potatoes
    1/2 lb. Velveeta cheese
    1/2 c. chopped onions
    1/2 c. melted butter
    1 tsp. parsley
Preparation
    Cook lasagna noodles about 10 minutes.
    Drain.
    Cook potatoes, drain, add diced cheese and mash with milk and butter.
    Lay 3 noodles in bottom of a 13 x 9 x 2-inch casserole that has been well greased.
    Spread half potato mixture over noodles.
    Add 3 more noodles with remaining potatoes on top.
    Cover with foil and bake at 350\u00b0 for 1/2 hour.
    Saute onions in butter while casserole is baking.
    Top with onions before serving.
