Ingredients

2 eggs, beaten
1/3 c. flour
1 tsp. salt
1/8 Tbsp. pepper
1/2 Tbsp. baking powder
3 medium potatoes, grated
3 Tbsp. milk
2 Tbsp. drippings
Preparation

Beat eggs.
Mix dry ingredients together and then mix all ingredients together in a large bowl.
If potatoes are grated ahead of time, put them in milk to avoid discoloration.
Drop pancake mix by large spoonfuls onto hot griddle.
Reduce heat. Brown on both sides and then remove to a warm dish.
