Pink Orzo With Tomatoes - cooking recipe

Ingredients
    1 c. orzo (large size, rice-shaped pasta)
    1 Tbsp. oil
    2 c. chicken broth
    salt and pepper to taste
    2 tomatoes, peeled, seeded and chopped
    1 small onion, chopped
    2 cloves garlic, minced
    1 tsp. oil
Preparation
    In a Dutch oven casserole, saute orzo in oil, stirring all the while, until orzo is just beginning to take on color.
    Carefully pour in (it will splatter) the chicken broth and seasonings. Cover pan and simmer mixture for 40 minutes, or until orzo is tender and liquid is absorbed.
