10 Bean Soup - cooking recipe

Ingredients
    1/4 c. each: large lima beans, small lima beans, pinto, red kidney, lentils, split pea, Great Northern, navy, pearl barley, black-eyed peas
    2 Tbsp. salt
    2 qt. water
    1/2 lb. ham or ham hocks
    1 large onion, chopped
    1 large can tomatoes
    1 pod of red pepper or 1 tsp. chili powder
    juice of lemon
    salt and pepper to taste
Preparation
    Wash thoroughly beans and place in large kettle.
    Cover with water and then add salt.
    Soak overnight.
    In the morning drain. Add water.
    Add ham or
    ham hocks.
    Bring to a boil.
    Stir occasionally.
    Simmer 2 to 3 hours.
    Then add onion, tomatoes, pepper or chili powder, lemon juice and salt and pepper.
    Simmer another 30 minutes.
    Serves 12.
    Better made a day or two ahead.
