Salmon Croquettes - cooking recipe

Ingredients
    1 (16 oz.) can salmon
    1 can cream of chicken soup
    1/4 c. fine chopped onion
    1 Tbsp. parsley
    3 eggs
    1/8 tsp. pepper
    1 1/2 c. fine bread crumbs
    flour
Preparation
    Combine drained salmon, chicken soup, onion, parsley, 1 egg and 1/2 cup bread crumbs.
    Mix well and chill for one hour.
    Shape into 3 inch patties.
    Slightly beat the 2 remaining eggs.
    Roll patties in flour, dip into egg, then coat with remaining bread crumbs. Chill an additional 2 hours.
    Heat deep frying oil to 365\u00b0.
    Add 4 croquettes at a time and fry about 3 minutes or until golden. Drain on paper towels.
    Serve with cocktail or tartar sauce.
