Baked Jack Corn - cooking recipe

Ingredients
    2 large eggs, lightly beaten
    1 1/2 c. sour cream
    2 c. fresh corn kernels
    1 (8 oz.) pkg. Monterey Jack cheese, cut into 1/2-inch cubes
    1/2 c. soft breadcrumbs
    1 (4.5 oz.) can chopped green chilies, drained
    1/2 tsp. salt
    1/4 tsp. pepper
    1/3 c. (2 oz.) shredded Cheddar cheese
Preparation
    Combine eggs and sour cream in a large bowl. Stir in corn and next 5 ingredients. Pour into a greased 10-inch quiche dish or 2-quart baking dish. Bake, uncovered, at 350\u00b0 for 35 minutes or until a knife inserted in center comes out clean. Sprinkle with Cheddar cheese and bake 5 more minutes. Let stand 10 minutes before serving. Yield: 6 servings.
