*Rice Pudding - cooking recipe

Ingredients
    1 c. rice (Carolina or River)
    1 qt. milk
    1/4 c. sugar
    pinch of salt
    2 eggs, beaten
    1 tsp. vanilla
    cinnamon
Preparation
    Wash rice, leaving a little water on it.
    Place in saucepan. Add milk and bring to a boil.
    Lower heat. Add sugar and continue on low heat, stirring occasionally. Add beaten eggs when rice is almost cooked. Take off heat. Add vanilla. Pour into casserole. Sprinkle with cinnamon.
    (Rice takes 20 minutes to cook.)
