Brown Rice Confetti Salad - cooking recipe
Ingredients

2 1/4 c. water
1/2 tsp. salt
1 c. small broccoli flowerets
1/2 c. sliced green onions
3 Tbsp. chopped fresh parsley
1/3 c. lemon juice
2 tsp. Dijon mustard
1 c. brown rice (uncooked)
1 c. thin yellow squash strips
1 c. sliced radishes
1/4 c. chopped fresh dill
1 tsp. grated lemon rind
2 Tbsp. olive oil
1/2 tsp. freshly ground pepper
garnishes: fresh dill sprigs and sliced yellow squash
Preparation

Combine first 3 ingredients in a saucepan; cook according to package directions.
Remove from heat and cool.
