Sauteed Spinach(Spinaci Saltati) - cooking recipe

Ingredients
    2 lb. spinach or 2 pkg. frozen
    1 tsp. salt
    1/4 c. water
    1/4 c. olive oil
    2 cloves garlic
    3 parsley sprigs
    1/4 tsp. red crushed pepper
    salt and pepper to taste
Preparation
    Wash
    fresh
    spinach
    thoroughly.
    Discard stems or any tough leaves.
    Place
    spinach
    in saucepan with 1 teaspoon of salt
    and a
    few
    tablespoons water; cook in covered pan over medium-low heat
    for
    10 minutes.
    Drain well.
    Heat oil in a large
    skillet and
    saute
    garlic
    until lightly golden.
    Add spinach,
    parsley, red pepper, salt and pepper.
    Saute spinach over high heat for 4 to 5 minutes.
    Makes 4 to 6 servings.
