Gold Rush Pork Chops - cooking recipe
Ingredients

6 rib chops (have butcher make pockets for dressing)
1 c. chopped apples
1/2 c. chopped celery
1/4 c. chopped onion
3 Tbsp. shortening
1 tsp. poultry seasoning
1/2 tsp. salt
dash of pepper
1/4 c. water
3 slices salt pork or bacon
1 lb. beef stew meat, in small pieces
2 large beef soup bones
1 lb. neck of lamb
1 tsp. salt
1 tsp. ground pepper
1/2 c. flour
2 yellow onions, peeled and chopped
5 c. beef stock
2 bay leaves
1 lb. carrots, in 2-inch pieces
8 potatoes, peeled and cut in thirds

Crab is abundant in Puget Sound.
A good day's outing was (still is!) to boat to a favorite crabbing spot.
