Crispy Baked Veggies - cooking recipe

Ingredients
    4 c. raw vegetables such as broccoli or cauliflower flowerets, 1/2-inch thick chunks zucchini, 1/2-inch strips green peppers, whole mushrooms, sliced carrots
    2 eggs, beaten
    1/4 c. melted butter
    2 cloves garlic, minced or pressed
    2/3 c. Parmesan cheese, grated
    2/3 c. dry instant potato flakes
Preparation
    Wash and pat dry vegetables.
    Prepare (cut) and rinse; pat dry. Dip veggies into beaten egg.
    In medium box combine butter, garlic, Parmesan cheese and potato flakes.
    Roll dipped veggies in potato mixture.
    Turn to coat all sides.
    Place 1 inch apart onto ungreased cookie sheets.
    Bake at 400\u00b0 for 15 to 20 minutes or until lightly golden and crisp.
    Serve immediately.
