Chicken In Tomato-Vegetable Sauce - cooking recipe

Ingredients
    4 to 6 chicken breasts, skinned
    1 carrot, coarsely chopped
    1 large onion, coarsely chopped
    3/4 c. sliced mushrooms
    parsley
    1 c. white wine
    1 c. chicken broth (taste after 1/2 c.)
    1 can tomato paste
    1 Tbsp. olive oil
    red pepper to taste
    1 clove garlic
Preparation
    Sprinkle red pepper over chicken.
    Brown chicken in olive oil on both sides.
    Add onion and carrot.
    Spread tomato paste on chicken.
    Add wine and broth.
    Simmer for 15 minutes.
    Add clove of garlic.
    Cover and simmer 1 hour.
    Add mushrooms and cook 10 to 15 minutes.
    Sprinkle with parsley.
    Serve over linguini.
