Linden Tree Chicken Salad - cooking recipe

Ingredients
    1 qt. water
    1 stalk celery
    1 small onion with 4 cloves
    1 carrot, peeled
    2 1/2 lb. chicken breasts
    1 1/2 c. mayo
    1 bunch celery, diced
    1 lb. carrots, grated
    1 (1 lb.) jar sweet pickles, drained and diced
    2 tsp. ground coriander
    2 tsp. ground ginger
    2 tsp. salt
    1 tsp. curry or to taste
    1 tsp. onion powder
    1 tsp. garlic powder
    1 tsp. ground white pepper
    1/2 c. almonds (optional)
Preparation
    Combine and cover.
    Chill for one hour.
    Makes 6 to 8 servings.
