Country Potato Cheese Soup - cooking recipe
Ingredients

2 Tbsp. butter
6 large potatoes, diced
2 medium onions, chopped
3 stalks celery, chopped
1/2 tsp. salt
pepper to taste
2 c. chicken broth
1 c. half and half
2 c. grated cheese (Colby or American)
Preparation

In a large saucepan, saute vegetables in butter for 5 minutes. Add chicken broth, salt and pepper. Cover and simmer until vegetables are tender.
Put mixture in blender and blend until smooth.
Return mixture to saucepan to heat. Stir in half and half. Add cheese. Heat until cheese is melted.
Makes 2 quarts.
