Oatmeal Muffins - cooking recipe

Ingredients
    1 c. quick rolled oats
    1 c. buttermilk or sour milk
    1/3 c. shortening
    1/2 c. brown sugar
    1 egg
    1 c. sifted flour
    1 tsp. baking powder
    1/2 tsp. soda
    1 tsp. salt
Preparation
    Preheat oven to 400\u00b0.
    Soak oats in buttermilk (can use sweet milk with the addition of 1 1/2 tablespoons vinegar).
    Stir for 1 hour.
    Mix shortening, sugar and egg.
    Sift flour, soda, baking powder and salt.
    Stir oats mixture.
    Add dry ingredients. Fill muffin tins and bake.
    Makes 12 muffins.
