Zucchini With Peanuts - cooking recipe

Ingredients
    8 medium sized zucchini
    small amount peanut oil
    1/2 c. finely chopped, dried apricots (soak in hot water until ready to use)
    1 avocado, peeled and coarsely chopped
    1 Tbsp. lemon juice or vinegar
    1 tsp. granulated sugar
    salt and pepper to taste
    3/4 c. unsalted peanuts, chopped
    1 Tbsp. lemon juice
    1 Tbsp. oregano
Preparation
    Steam
    or
    microwave
    the zucchini until tender.
    Drain and cut
    into pieces.
    Set aside, but keep warm.
    Heat peanut oil
    in a skillet and add half of the apricots (drained), the avocado pieces,
    1\ttablespoon
    lemon
    juice, sugar, salt and pepper. Cook
    3
    or 4 minutes or until well heated.
    Mix with the hot zucchini.
