Turkey Dressing - Southern - cooking recipe

Ingredients
    1 10-inch pan cornbread
    1 equal amount white bread
    3 c. chopped onion
    3 c. chopped celery
    2 eggs
    1 tsp. baking powder
    1 stick butter
    1/2 tsp. pepper
    1 Tbsp. salt
    1 Tbsp. sage
    1 Tbsp. poultry seasoning
    1 stock from boiling giblets in 1 1/2 qt. water with onion and celery (save veggies and giblets for gravy)
Preparation
    Saute 3 cups chopped onions and 3 cups chopped celery; set aside.
    Boil giblets from turkey in 1 1/2 quarts water with 1 onion and 1 cup celery.
    Crumble breads and use enough of stock to soften.
    Add onion and celery (2 cups each) and dry ingredients to crumble.
    Beat 2 eggs and add.
    Add 2 boiled eggs if desired.
    Put in a bit more broth, place in pans sprayed with Pam and bake at 350\u00b0 until top is crunchy.
