Confetti Fish - cooking recipe
Ingredients

1 lb. cod or flounder fillets
1 c. bread crumbs
1/4 tsp. basil
1/3 c. finely chopped onions
1/3 c. chopped green pepper
2 Tbsp. grated carrot
1/4 c. safflower oil
1 1/2 tsp. cider vinegar
Preparation

Preheat broiler to hot.
Place fish in oiled shallow pan in single layer.
In a small bowl combine crumbs, basil, onions, green pepper, carrot, oil and vinegar.
Spread mixture on fish. Broil 6 inches from heat until fish flakes easily.
