Ratatouille - cooking recipe

Ingredients
    1/4 c. olive oil
    2 cloves garlic, minced
    1 onion, chopped
    1 green pepper, sliced
    3 zucchini, sliced
    1 eggplant, cubed
    2 tsp. basil
    1 tsp. oregano
    dash of pepper
    3 tomatoes, cut up
Preparation
    Heat oil in a large skillet; add garlic, onion, green pepper and zucchini.
    Cook about 3 minutes until onion is tender, stirring frequently.
    Add eggplant, basil, oregano and pepper; cover and cook over medium heat for 15 minutes, stirring occasionally.
    Add tomato wedges; cover and cook 5 minutes or until tomatoes are heated.
    May be served warm or chilled.
