Crusty Baked Eggplant - cooking recipe

Ingredients
    1 eggplant
    1 tsp. salt
    1 egg
    2 Tbsp. grated Parmesan cheese
    1/4 c. fine dry bread crumbs
    1 Tbsp. finely chopped parsley
    1/4 c. all-purpose flour
    2 Tbsp. butter or margarine, melted
Preparation
    Peel eggplant, if you wish; cut into 1/2-inch slices. Sprinkle salt on both sides of slices.
    Let stand for 30 minutes. Rinse with water and pat dry.
