Roasted Onions(Cipolle Arrostiti) - cooking recipe

Ingredients
    4 large Spanish onions
    1/4 c. olive oil
    1/4 c. wine vinegar
    salt and pepper
Preparation
    Place onions on a baking sheet
    and
    bake at 350\u00b0 for 1 to 1 1/2 hours, or until tender but not mushy.
    They should be crunchy to the bite.
    When they
    are done, cool and peel.
    Cut into wedges and separate.
    Arrange
    in a large flat bowl.
    Add oil and vinegar and
    toss
    lightly.
    Sprinkle
    with
    salt
    and pepper.
    Serve with roasted
    meats.
    Leftovers
    are
    great and can last for several days.
