Marilyn'S Vegetable Lasagna - cooking recipe

Ingredients
    6 Lasagna Noodles
    2 qt. Water
    2 Tbsp. Vegetable Oil
    1 c. chopped Onion
    4 medium Carrots
    2 tsp. minced Garlic
    1-3/4 c. Spaghetti Sauce
    1/2 c. Water
    1 tsp. Basil
    1/2 tsp. Oregano
    1 (10 oz.) pkg. frozen Spinach or 1.2 pkg. fresh
    2 Eggs
    2 c. Cottage Cheese
    4 Tbsp. Parmesan Cheese
    1 c. sliced Mushrooms
    1 c. quartered Zucchini
    1 c. shredded Mozzarella Cheese
Preparation
    Cook Lasagna. Heat vegetable oil in a sauce pan. Add Onions, Carrots, and Garlic. Saute until Carrots are tender. Add Spaghetti Sauce, Water and Spices. Bring to a simmer. Beat Eggs and blend in the Cottage Cheese, Parmesan Cheese, and vegetables. Spread thin layer of Sauce in 9 x 13 inch pan. Cover with layer of Noodles, spoon 1/2 Cheese mixture over Noodles. Cover with 1/2 Sauce over the Cheese. Repeat. Cover with foil and bake at 350 for 35 minutes. Remove foil. Sprinkle with Mozzarella Cheese and bake uncovered for 15 minutes.
