Ingredients

2 c. persimmon pulp
2 c. sugar
3 eggs, beaten
1 Tbsp. vanilla
1 tsp. salt
1 small grated sweet potato
2 c. flour
1 c. canned milk
3 Tbsp. baking powder
1 tsp. baking soda
Preparation

Mix the persimmon pulp and sugar.
Add beaten eggs, milk and vanilla flavoring.
Sift dry ingredients and add grated potato. Add to liquid mixture.
Pour in greased baking dish.
Bake at 300\u00b0 for 1 hour and 10 minutes.
