Mushroom Croustades - cooking recipe
Ingredients

24 slices white bread
2 Tbsp. soft butter
3 Tbsp. minced green onion
4 Tbsp. butter
1/2 lb. fresh mushrooms
2 Tbsp. flour
1 c. whipping cream
1/2 tsp. salt
1/8 tsp. cayenne
1 Tbsp. chopped parsley
1 1/2 Tbsp. chives
1/2 tsp. lemon juice
Preparation

Make bread cups; cut circles of bread, missing crusts.
Butter both sides and put into muffin tins.
Bake at 325\u00b0 for 10 to 15 minutes.
Saute 3 tablespoons chopped green onions in 4 tablespoons of butter.
While in foam stage, not brown, add fresh mushrooms.
Cook until moisture is evaporated 10 to 15 minutes. Sprinkle flour over mixture.
Pour whipping cream over this mixture and bring to a boil.
It will thicken heavily.
Add seasonings and lemon juice.
Cook 1 to 2 minutes.
Fill bread cups and sprinkle with Parmesan cheese.
Dot with butter.
Bake at 350\u00b0 until hot.
