Golden Potato Salad - cooking recipe

Ingredients
    4 c. diced, cold, cooked potatoes
    1 large onion, finely chopped
    2 Tbsp. chopped parsley
    1 1/4 tsp. salt
    2 Tbsp. skim milk
    4 Tbsp. yellow mustard
    1/2 tsp. sweetener
    2 Tbsp. vinegar
    1 c. chopped celery
    pepper to taste
Preparation
    Combine milk, mustard, sweetener, vinegar, salt into a small bowl and beat until light and fluffy.
    Mix well with potatoes, onion, parsley and celery.
    Hard-boiled eggs may be added, if desired.
