Washington State Apple Pie - cooking recipe

Ingredients
    6 c. sliced, peeled baking apples
    2 Tbsp. water
    1 Tbsp. lemon juice
    1/2 c. sugar
    1/2 c. packed brown sugar
    3 Tbsp. all-purpose flour
    1 tsp. cinnamon
    1/4 tsp. nutmeg
    1/8 tsp. ginger
    1/8 tsp. salt
    pastry for double 9-inch crust
Preparation
    In saucepan combine apples, water and lemon juice, cook over medium
    low
    heat
    just until apples are tender.
    Remove from heat
    and
    cool
    (do not drain).
    In large bowl, combine sugars, flour, cinnamon, nutmeg, ginger and salt.
    Add apples and
    toss to
    coat.
    Place
    bottom
    pastry in pie plate.
    Add apple mixture.
    Cover with top pastry.
    Seal and flute edges. Cut
    slits in top crust.
    Bake at 450\u00b0 for 10 minutes.
    Reduce heat
    to 350\u00b0.
    Bake
    35 to 45 minutes longer or until golden brown.
