Cannelloni - cooking recipe

Ingredients
    2 tablespoons Olive Oil
    1/4 cup chopped onion
    1 tablespoon finely chopped garlic
    1 10 oz. pkg. frozen chopped spinach (thaw, squeeze dry, chop drain)
    1 Tbsp. butter
    1 pound ground round
    5 Tbsp parmesan cheese
    2 Tbsp heavy cream
    2 eggs, lightly beaten
    salt and pepper to taste
Preparation
    Heat olive oil in large skillet.
    Add onions and garlic, cook over moderate heat.
    7 - 8 minutes.
    They will be soft, but not brown.
    Add dried spinach, stirring constantly and cook 3 - 4 minutes.
    When the moisture is cooked away and spinach sticks lightly to the sides of the pan, transfer it to a large mixing bowl.
    In the same skillet melt 1 tablespoon butter and lightly brown the ground beef.
    Add to spinach mixture.
    Add to all the above spinach, meat mixture 5 tablespoon Parmesan cheese, 2 tablespoons heavy cream, the eggs, oregano, salt and pepper.
    Mix well and set aside.
