Lentil Soup - cooking recipe

Ingredients
    1 c. lentils
    1 medium onion, chopped
    1 stalk celery, chopped
    1 Tbsp. olive oil
    1 bay leaf
    salt and pepper
    3 Tbsp. tomato paste
    3 Tbsp. white wine vinegar
    1/4 tsp. oregano
Preparation
    Wash lentils; soak in cold water for 2 hours; drain.
    Saute onion and celery in olive oil.
    Add lentils, 1 1/4 quarts water, bay leaf, salt, pepper and tomato paste.
    Boil, then simmer, covered 1 1/2 hours.
    Add vinegar and oregano.
    Simmer 30 minutes.
