Baked Rice Pudding - cooking recipe

Ingredients
    4 eggs, beaten
    3 c. milk
    1/3 c. sugar
    1/4 tsp. salt
    2 tsp. vanilla extract
    2 tsp. grated lemon peel
    2 c. cooked rice
Preparation
    Combine all ingredients and pour into a 2 1/2-quart baking dish.
    Set dish in a pan of hot water.
    Bake at 300\u00b0 for 1 hour. After 30 minutes, inserted spoon at edge of pudding and stir from bottom.
    Continue baking until knife inserted near center of pudding comes out clean.
    Serve hot or cold.
    Makes 6 to 8 servings.
