Shrimp Ala Creole - cooking recipe
Ingredients

2 Tbsp. olive oil
2 c. chopped onion
1/4 c. chopped bell pepper
1 c. chopped fresh parsley
1 c. dry white wine
4 c. chopped fresh or canned tomatoes
1 Tbsp. minced garlic
1 Tbsp. Worcestershire sauce
1 c. tomato sauce
salt to taste
1/2 tsp. crushed dried mint
ground cayenne pepper or L.A. hot sauce to taste
2 lb. raw peeled shrimp
Preparation

In a large high-walled skillet or wok, heat oil over medium-high heat.
Add the onions, bell pepper and parsley; saute until the onions are clear.
Stir in the wine, tomatoes, garlic, Worcestershire sauce, tomato sauce, salt, mint and pepper.
Cover and cook over medium heat until the sauce comes to a boil.
Reduce heat to low; cover and simmer for 1 hour until the tomatoes fall apart.
Add the shrimp and continue simmering 30 minutes or more, stirring occasionally.
Serve over cooked rice or pasta or use as an omelette filling.
