Zucchini Pie - cooking recipe

Ingredients
    6 c. sliced, peeled zucchini
    1 1/2 tsp. cream of tartar
    1 tsp. nutmeg
    1 Tbsp. vinegar
    1 1/4 c. sugar
    1 tsp. cinnamon
    1/2 tsp. salt
    double crust
    24 cream filled chocolate cookies, finely crushed (Hydrox)
    1/4 c. margarine, melted
    1/4 c. creme de menthe (green; live a little and add a little more)
    1 (1 pt.) jar Marshmallow Creme
    2 c. heavy cream, whipped
Preparation
    Combine cookie crumbs and margarine.
    (Reserve 1/2 cup mixture for top.)
    Press into greased 9-inch spring-form pan.
    Add creme de menthe to marshmallow.
    Mix until blended at low speed.
    Fold in whipped cream.
    (I imagine you could use Pyrex pie plate for this, but works beautifully in spring-form pan.)
