Fruit Stuffing Goose - cooking recipe

Ingredients
    1/4 c. butter
    1/2 c. chopped celery
    1/2 c. chopped onion
    6 c. bread cubes
    1/2 tsp. thyme
    2 tsp. salt
    1/2 tsp. pepper
    2 c. peeled, chopped apples
    1 c. chopped, dried apricots
Preparation
    Roast goose 1 hour at 400\u00b0, then prick skin.
    Reduce heat to 350\u00b0 for 1 to 2 hours.
    Skim off excess fat as it accumulates.
