Green Tomato Pickles - cooking recipe

Ingredients
    7 lb. sliced green tomatoes
    3 c. lime
    5 lb. sugar minus 1 c.
    3 pt. vinegar
    3 Tbsp. pickle spices
Preparation
    Dissolve lime in 2 gallons of water and cover sliced tomatoes. Soak 24 hours; rinse thoroughly and place in clear water.
    Let set in clear water one hour; then change at 1 hour intervals (4 times in clear water in all).
    Drain well.
    Mix sugar, vinegar and spices; bring to a boil.
    Pour over drained, sliced tomatoes and simmer for 1 hour.
    Yields 5 1/2 quarts.
