Squash Fritters - cooking recipe

Ingredients
    1 lb. yellow squash, sliced thin
    1 egg, beaten
    1/4 c. flour
    1/2 tsp. baking powder
    1/2 c. corn bread mix
    1/2 tsp. pepper
    1 medium onion
    peanut oil (for frying)
    1/4 tsp. salt
Preparation
    Cook squash for 10 minutes; drain and mash.
    Add beaten egg and onion to squash.
    Sift all dry ingredients together.
    Mix with the squash mixture.
    Drop by spoonfuls into hot oil.
    Cook until golden brown, turning once.
