Garden Taco Rice - cooking recipe

Ingredients
    1 lb. ground beef
    1 c. chopped onion
    1 pkg. taco mix
    1 1/2 c. thin sliced zucchini
    1 c. frozen corn
    1 (14 oz.) can stewed tomatoes
    3 c. cooked rice
    1 c. shredded Cheddar cheese
Preparation
    Cook rice according to package directions.
    Brown ground beef and onion; drain off fat.
    Stir in remaining ingredients, except the cheese.
    Reduce heat to low and cook for about 15 minutes. Turn off heat.
    Sprinkle with cheese; cover and let stand about 3 minutes, until cheese is melted.
