Ingredients

1 3/4 tsp. liquid sugar substitute
1/4 c. orange juice
1 tsp. vanilla
4 Tbsp. butter
1 c. sifted flour
1/4 tsp. salt
1/4 tsp. baking powder
2 Tbsp. coconut, shredded, dried and unsweetened
Preparation

Combine sugar substitute with orange juice and vanilla.
Cream butter.
Sift dry ingredients together and combine with butter and liquid.
Knead in the coconut.
Shape dough into roll.
Wrap in waxed paper.
Chill until firm.
Cut into slices 1/8-inch thick and place on cookie sheet.
Bake in preheated 400\u00b0 oven about 10 minutes or until brown around edges.
Makes 30 cookies.
