Watermelon Rind Pickles - cooking recipe

Ingredients
    4 lb. rind
    1 Tbsp. flaked lime
    2 qt. cold water
    1 Tbsp. whole pickling spice
    1 qt. vinegar
    4 lb. sugar
Preparation
    Peel the rind and cut in cubes, combine cold water and lime. Let stand for 1 hour with rind in it.
    Then wash two times, cover with fresh water and simmer for 1 1/2 hours until rind is tender; then drain water off.
    Combine vinegar and sugar; heat until sugar dissolves.
    When sugar has dissolved, add spices and rind; simmer 2 hours.
    Pack rind in hot sterile jars and fill with the vinegar and syrup.
    Seal jars.
    Eat with any kind of meat or veggies.
