Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. oil
    1 tsp. vanilla
    2 c. grated zucchini (raw with peel)
    2 1/4 c. plain flour
    1 tsp. cinnamon
    1 tsp. salt
    2 tsp. baking soda
    1/2 tsp. baking powder
    1 c. chopped nuts
Preparation
    Beat eggs until thick and lemon colored.
    Gradually add sugar, oil and vanilla to eggs.
    Mix dry ingredients together.
    Add flour mixture and zucchini alternately to the egg mixture.
    Fold in chopped nuts.
    Pour into 2 oiled and floured loaf pans.
    Bake at 375\u00b0 for 1 hour or until toothpick comes out clean.
    Cool in pan 10 minutes, then cool on rack.
