Ingredients

1/2 c. sifted cake flour
1/4 tsp. salt
1/2 tsp. almond extract
6 Tbsp. sugar
3/4 tsp. baking powder
3 eggs, separated
1/4 tsp. pure vanilla
Preparation

Beat egg yolks in small bowl until very thick and lemon colored.
Add flavoring during the beating.
In another bowl, beat whites until stiff and shiny.
Add sugar 1 tablespoon at a time. Beat constantly.
Beat until whites are stiff and glossy.
Gently and slowly fold in egg yolks, then dry ingredients.
Drop onto ungreased baking sheet by level tablespoonful for each cookie. Space 2 inches apart.
Bake 10 minutes until golden brown at 350\u00b0 .
Let stand, uncovered, to dry and crisp.
Makes 40 cookies.
