Delicious Bean Soup - cooking recipe

Ingredients
    1 1/2 c. Great Northern beans
    meaty ham bone
    1 c. diced onions
    1 c. diced potato
    1/2 c. diced celery
    1/2 to 1 c. diced carrots
    1 clove garlic, minced or chopped fine
Preparation
    Soak beans overnight in 1 quart of water, then drain beans and measure liquid.
    Add enough water to make 2 quarts.
    Place soaked beans, water and ham bone in a kettle.
    Cover and simmer 2 hours. Add onions, potato, celery, carrots and garlic.
    Simmer 1 more hour.
    Remove meat from bone and return meat to soup.
    Season to taste with salt and pepper.
    Serve piping hot.
    Any leftovers freeze well.
