Ingredients

1/2 c. Margarine
1/2 c. Shortening
2 c. Sugar
6 Eggs
2 c. Flour
1 Tbsp Lemon Juice
1 Tbsp Lemon Rind
1 Can Flaked Coconut
Preparation

Have all ingredients at room temperature.
Cream margarine or butter, shortening and sugar until fluffy.
Add eggs one at a time, beating well after each addition.
Sift flour and fold in small amounts at a time.
Blend in lemon juice, lemon rind and coconut. Bake in greased and floured 10 inch tube pan at 350 degrees about 45 minutes.
Cool before removing from pan.
