Sweet Potato Salad - cooking recipe

Ingredients
    2 lbs. sweet potatoes
    1 1/2 c. mayonnaise
    2 tsp. Dijon mustard
    1/4 tsp. salt
    4 hard cooked eggs, chopped
    1 1/2 c. finely chopped celery
    8 green onions, sliced
Preparation
    Place potatoes in large sauce pan, cover with water and boil gently until potatoes can be easily pierced with sharp knife (about 30-45 mins).
    Drain.
    When potatoes are cool, peel and dice.
    In large bowl combine mayonnaise, mustard and salt.
    Then stir in eggs, celery and onions.
    Add potatoes stirring gently to mix. Cover and refrigerate for 2 to 4 hours.
    Yields 8 to 10 servings.
