Applescotch Pie - cooking recipe

Ingredients
    5 c. sliced, pared tart apples
    1 c. brown sugar (packed)
    1/4 c. water
    1 Tbsp. lemon juice
    1/4 c. flour
    2 Tbsp. granulated sugar
    1 tsp. vanilla
    3/4 tsp. salt
    3 Tbsp. butter
    pastry for double crust
Preparation
    Mix apples, brown sugar, water and lemon juice in saucepan. Cover and cook slowly until apples are just tender, 7 to 8 minutes.
    Blend flour and granulated sugar.
    Add to apples.
    Cook, uncovered, stirring, until syrup thickens (about 2 minutes). Remove from heat, add vanilla, salt and butter.
    Cool.
    Pour apples into pastry lined pie pan; cover with top crust, which has slits cut in it.
    Seal and flute.
    Bake at 425\u00b0 for 40 to 45 minutes or until crust is nicely browned.
