Zucchini Mushroom Casserole - cooking recipe

Ingredients
    3 Tbsp. oil
    3 c. sliced zucchini
    1/2 lb. mushrooms, sliced
    1/2 onion, sliced
    1/2 green pepper, sliced
    parsley to taste
    2 cloves pressed garlic
    1 tsp. dried oregano
    1/2 tsp. basil
    1 (16 oz.) can stewed tomatoes
    1 (8 oz.) can tomato sauce
    salt and pepper
    2 c. shredded Mozzarella cheese
Preparation
    In skillet, heat oil and saute onion and green pepper until tender.
    Add zucchini and mushrooms with parsley, garlic, oregano and basil until softened.
    Stir in tomatoes, breaking with fork, and tomato sauce.
    Salt and pepper and simmer 10 to 15 minutes.
