Chili-Corn Muffins - cooking recipe
Ingredients

1 c. yellow cornmeal
3 tsp. baking powder
1/2 c. flour
1 tsp. salt
1/8 tsp. soda
1 c. cream-style corn
2 eggs
1 c. buttermilk
1/3 c. cooking oil
1 small can diced green chiles
1 c. sharp Cheddar cheese, grated
Preparation

Combine dry ingredients. Add grated cheese. Mix. Beat eggs. Add corn, buttermilk, oil and green chiles. Add to dry ingredients. Mix well. Spoon into greased muffin tins. Bake at 400\u00b0 for 25 minutes or until brown around edges. Serve with Pinto Bean Stew without meat for complete protein.
