Roast Opossum - cooking recipe

Ingredients
    1 medium or large carcass (for 4 persons)
    1/2 tsp. salt
    1/4 tsp. pepper
    1 tsp. baking soda
    1/4 lb. fatback or salt pork, sliced thin
    2 medium onions
    1 lemon or 1 large tomato (ripe or green)
    4 medium sweet potatoes or yams (about the size of a man's fist)
    butter
    few raisins
    brown sugar
Preparation
    Clean the 'possum by scalding and scraping.
    Chill overnight. Parboil in a large vessel in a large quantity of water to which has been added 1 teaspoon of baking soda.
    Cook until tender. This does two things, cooks out much of the fat grease and makes the meat tender.
