Black Bean And Red Papaya Salad - cooking recipe

Ingredients
    3 Tbsp. fresh lime juice
    1 Tbsp. fresh ginger, minced
    1 Tbsp. honey
    4 Tbsp. olive oil
    1 tsp. salt
    1/4 tsp. freshly ground pepper
    * 2 c. canned black beans, drained and rinsed
    2 medium papayas (small and fruity, about the size of a pear)
    * 1/2 small red onion, thinly sliced cross wise
    1/2 c. loosely packed mint leaves, coarsely chopped
Preparation
    Combine lime juice, ginger, and honey in a small bowl, whisk in olive oil and season with salt and pepper.\tSet vinaigrette aside. Peel, seed and cut papaya into 1/2 inch dice.
    Combine black beans, papayas and red onions in a large bowl and toss together.
    Pour vinaigrette over and toss again.
    Cover and refrigerate for 30 minutes.
    Add mint, toss again, and serve immediately.
