Fruited French Muffins - cooking recipe
Ingredients

2 large eggs
1/3 c. orange juice
1 Tbsp. cinnamon-sugar
1/4 tsp. vanilla extract
4 English muffins, split and toasted
2 Tbsp. butter or margarine
2 c. assorted fruit: sliced kiwi fruit, strawberries, pineapple chunks
3/4 c. pourable apricot preserves
Preparation

In pie plate, whisk eggs, orange juice, cinnamon-sugar and vanilla.
Add flour muffin halves; turn to coat both sides.
In 12-inch skillet, over medium heat, melt 1 tablespoon butter. Place prepared muffin halves, cut side down, in skillet; cook until lightly browned on both sides, about 5 minutes.
Repeat with remaining muffins, eggs mixture and margarine.
Meanwhile, in medium bowl, toss fruit with preserves.
Serve mixture over prepared muffins.
Serves four.
