Pita Pocket Bread(Arabic Bread) - cooking recipe

8 c. flour
1 Tbsp. salt
2 Tbsp. sugar
1 cake (Tbsp.) yeast
2 1/2 c. warm water
Preparation

Sift dry ingredients.
Soften yeast in water.
When it is bubbly, stir the yeast mixture into the flour mixture.
Mix thoroughly. Knead in a bowl, adding more flour or water as necessary.
The dough should be smooth and firm, not stiff. Brush the top of the dough with butter and cover the bowl.
Let the dough rise until doubled in bulk, then punch the dough down and turn it out onto a floured board.
Divide into 12 pieces. Shape into balls and let rest, covered, 10 minutes.
